  • Sweet Potatoes

    • 1 tsp ground cinnamon
  • Beef
    • 2 tbsp oil (olive, avocado, or vegetable)
    • 2 lbs ground beef
    • 1 packet taco seasoning (about 2 tbsp)
  • Toppings
    • 2 cups cottage cheese (½ cup per bowl)
    • 1 large avocado, diced (¼ per bowl)
    • 2–3 tbsp honey, warmed

Instructions

  1. Roast the Sweet Potatoes
    • Preheat oven to 425°F (220°C).
    • Toss diced sweet potatoes with olive oil, salt, pepper, and cinnamon.
    • Spread evenly on a baking sheet.
    • Roast for 20–25 minutes, flipping halfway, until golden and tender.
  2. Cook the Taco Meat
    • Heat 2 tbsp oil in a large skillet over medium heat.
    • Add ground beef, season with salt and pepper, and cook until browned.
    • Drain excess fat or liquid if needed.
    • Stir in taco seasoning and ¼ cup water. Cook for 3–4 minutes until well coated.
  3. Assemble the Bowls
    • Divide roasted sweet potatoes evenly among 4 bowls.
    • Top each with seasoned taco meat.
    • Add ½ cup cottage cheese and ¼ avocado per bowl.
    • Drizzle each with warm honey.
