I call these Sunrise Bars for a reason—they were born during one of my 4 a.m. mornings, when I was in the kitchen before the world even started moving. Between being a private chef, a single mom, running to clients, making content, and trying to take care of myself, I needed something easy, nourishing, and actually satisfying. Something I could grab with one hand while tying my kid’s shoe with the other. 😅

These bars are that. They're chewy, sweet, salty, and full of healthy fats, protein, and natural carbs that actually fuel you. No processed junk, no weird ingredients—just real food that holds you down.

The almond butter and coconut oil give that rich, creamy base, while the pumpkin seeds, almonds, and cranberries add texture, crunch, and natural sweetness. And the citrus zest? Don’t skip it. It lifts the whole thing—like a little burst of sunshine in every bite. 🌞

What I love most is that these are totally no-bake and meal-prep friendly. I usually make a batch on Sunday night, cut them into bars, and keep them in the fridge. My kid loves them, my clients have asked me for the recipe, and honestly—they keep me from skipping meals when my schedule is packed.

Ingredient List

  • 1½ cups almond butter (unsweetened, smooth or crunchy)
  • ¾ cup raw honey
  • ⅓ cup coconut oil (warmed to liquid)
  • 1 tsp sea salt
  • 1 Tbsp pure almond extract
  • 3 cups finely shredded unsweetened dried coconut
  • 1½ cups pumpkin seeds
  • 1½ cups almonds (whole or roughly chopped)
  • 1½ cups dried cranberries (preferably unsweetened or apple-sweetened)
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Line a baking pan (9x13 inches or similar) with parchment paper.
  1. In a large mixing bowl, whisk together almond butter, honey, coconut oil, sea salt, and almond extract until smooth.
  1. Fold in shredded coconut, pumpkin seeds, almonds, cranberries, and citrus zests. Mix until the ingredients are well combined and sticky.
  1. Press the mixture firmly into the prepared pan using a spatula or the back of a spoon.
  1. Chill in the refrigerator for at least 2–3 hours, or overnight, until fully set.
  1. Slice into 24 bars and store in an airtight container in the fridge for up to 10 days or freeze for up to 3 months.
