There’s something magical about simple comfort food made with love — and this “Marry Me Chicken” is exactly that. Creamy, flavorful, and just the right amount of heat, this one-pot wonder is the kind of meal that makes people say, “Wait… can you make that again?”

The name might sound funny, but the taste? It’s serious. Rich sun-dried tomatoes, a splash of cream, tender chicken, and a touch of jalapeño — this dish tastes like you spent all day cooking, but it comes together in under 30 minutes. It’s perfect for a weeknight dinner, a cozy date night in, or even impressing guests without the stress.

Best part? You only need one pot, which means less cleanup, more time to relax. (Or dance around the kitchen with a glass of wine — I won’t judge.)

  • 4 boneless, skinless chicken breasts
  • Salt & black pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tablespoons of olive oil
  • 3 cloves garlic, minced
  • 2 cups of chicken broth
  • 1/2 cup butternut squash pure
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 small jalapeño, finely diced (optional – adds a nice kick!)
  • Chopped fresh parsley or basil for garnish

Instructions

  1. Prep the chicken
    Season chicken breasts with salt and pepper. Lightly dredge each piece in flour, shaking off any excess.
  2. Sear it up
    Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chicken and cook 3–4 minutes per side until golden. Remove from the pan and set aside.
  3. Build the flavor
    In the same pan,  sauté garlic for 30 seconds, just until fragrant.
  4. Make it creamy
    Pour in chicken broth butternut squash pure and add sun-dried tomatoes. Stir, scraping up any golden bits stuck to the pan — that’s flavor! Let it simmer for 2 minutes.
  5. Bring it together
    Stir in the heavy cream and parmesan cheese. Add the chicken back to the pan and simmer covered for 10–12 minutes, or until the chicken is fully cooked and the sauce thickens slightly.
  6. Finishing touch
    Stir in the diced jalapeño for a little heat if you like. Garnish with fresh herbs and serve over pasta, mashed potatoes, rice, or crusty bread. Or eat it just as it is — it’s that good!
