If you know me, you already know I absolutely love anything lemon. There’s just something about that fresh lemon flavor mixed with a soft, buttery muffin and sweet lemon glaze that feels comforting, cozy, and completely irresistible.

These Lemon Poppy Seed Muffins are one of those recipes I make over and over again — for my clients, for myself, and for family and friends anytime I want something delicious ready to grab and go during a busy week.

Muffins

  • 2 eggs
  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup melted butter
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons poppy seeds
  • Pinch of salt

Lemon Glaze

  • 1 cup powdered sugar
  • Juice of 2 lemons
  • Zest of 2 lemons

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with muffin liners.
  2. In a large mixing bowl, whisk together the eggs, milk, sugar, melted butter, lemon juice, lemon zest, and vanilla extract until smooth and fully combined.
  3. In a separate bowl, mix together the flour, baking powder, poppy seeds, and salt.
  4. Slowly add the dry ingredients into the wet ingredients and gently stir until just combined. Be careful not to overmix the batter to keep the muffins soft and fluffy.
  5. Divide the batter evenly into the muffin liners, filling each about 2/3 full.
  6. Bake for 18–20 minutes or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  7. Remove the muffins from the oven and allow them to cool for about 10 minutes before glazing.
  8. To make the glaze, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth. If needed, adjust the consistency with a little more lemon juice or powdered sugar.
  9. Drizzle the glaze generously over the warm muffins and let it set for a few minutes before serving.
  10. Enjoy fresh, or store in an airtight container for an easy grab-and-go breakfast or snack throughout the week 🍋✨
