I love that this recipe makes two large lattes — perfect for sharing if you’re feeling generous, or keeping both for yourself if you had one of those weeks (no judgment here 😄).

The secret to that silky coffeehouse texture is blending everything in the Vitamix. It turns the pumpkin and milk into this dreamy, frothy latte that’s better than anything you can buy. And the best part? You can use any milk you want — oat milk, almond, coconut, or classic whole milk.

Some weekends, I skip the whipped cream to “be good.” Other weekends… let’s just say I pile it on and pretend it’s part of my self-care routine. Either way, this latte makes my Saturday mornings feel a little slower and a lot more special. 🍁☕

  • 4 shots espresso or 1 cup strong brewed coffee (or cold brew)
  • 2 cups milk (any kind — dairy or non-dairy)
  • 6 tablespoons pumpkin purée
  • 6 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice (heaping), plus more for dusting
  • 2 pinches sea salt
  • Whipped cream, for topping (optional)
  • Ground cinnamon, for garnish

Instructions

  1. In a small pot, add milk and coffee.
  2. Stir in the pumpkin purée, maple syrup, and pumpkin pie spice.
  3. Warm gently over medium-low heat until hot but not boiling.
  4. Whisk the mixture to blend and soften the pumpkin.
  5. Pour everything into a Vitamix or high-speed blender.
  6. Add vanilla extract and sea salt, then blend until creamy and smooth.
  7. Pour into two large see-through cups or mugs.
  8. Top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice.
