There are certain meals I could eat every single day and never get tired of… and shrimp tacos are absolutely one of them.

I love shrimp. I love tacos. I love slaw. I love cabbage. And I really love anything with a creamy yogurt sauce. So one day I decided to combine all of my favorites into one dish that feels indulgent, but is actually balanced, clean, and packed with protein.

This is one of those recipes that hits every craving — fresh, spicy, creamy, crunchy — but still leaves you feeling light, energized, and not weighed down.

My Approach to Making It Healthy

Instead of heavy fried shrimp or mayo-based sauces, I use:

• Lean roasted shrimp
• Greek yogurt for protein-rich creaminess
• Fresh cabbage slaw for fiber and volume
• Almond flour or low-carb tortillas when I want it lighter

It’s about making smart swaps without sacrificing flavor.

You should never feel like you’re dieting when you’re eating good food.

You should feel satisfied.

The Sweet Spot Done Right

For the Shrimp

  • 1 lb large raw shrimp, peeled & deveined
  • 2–3 tbsp homemade taco seasoning
  • Salt & black pepper to taste
  • 2 tbsp avocado oil

For the Fresh Lime Slaw

  • 1 bag coleslaw mix
  • ½ red bell pepper, thinly sliced
  • ½ green bell pepper, thinly sliced
  • 3 green onions, sliced
  • 2 garlic cloves, minced
  • Juice of 2 limes
  • 1–2 tbsp olive oil
  • Salt & pepper to taste

Chipotle Crema

  • ½ cup plain Greek yogurt
  • 1 chipotle pepper in adobo sauce
  • ½ lime, juiced
  • 2 garlic cloves
  • Salt & pepper to taste

For Serving

  • Corn tortillas
  • Fresh cilantro
  • Sliced avocado
  • Extra lime wedges

Instructions

1. Prepare the Shrimp

Preheat oven to 400°F.
Pat shrimp dry and toss with taco seasoning, salt, pepper, and avocado oil.
Spread on a baking sheet in a single layer.
Roast for 8–10 minutes until pink and cooked through.

(You can also sauté in a hot skillet for 2–3 minutes per side.)

2. Make the Slaw

In a large bowl, combine coleslaw mix, bell peppers, green onions, and garlic.
Drizzle with lime juice and olive oil.
Season with salt and pepper.
Toss well and let sit 10 minutes to soften slightly.

3. Make the Chipotle Crema

Blend yogurt, chipotle pepper, lime juice, garlic, salt, and pepper until smooth.
Adjust spice by adding more adobo sauce if desired.

4. Assemble the Tacos

Warm tortillas.
Layer slaw, shrimp, avocado slices, fresh cilantro, and drizzle generously with chipotle crema.

Serve immediately with extra lime on the side.
