  • 2 tbsp olive oil
  • 2 lbs. boneless, skinless chicken thighs (or breasts)
  • Salt and black pepper, to taste
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour (optional, for thickness)
  • 4 cups low-sodium chicken broth
  • 1 lb baby potatoes, halved
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp dried rosemary (or 1 tbsp fresh)
  • 1 bay leaf
  • ½ cup frozen peas (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped (optional, for garnish)

Instructions

  1. Sear the Chicken: Heat olive oil in a large pot over medium heat. Season the chicken with salt and pepper, then sear both sides until golden brown (about 4–5 minutes per side). Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and cook another minute.
  3. Add the Flour (optional): Sprinkle flour over the vegetables and stir for 1 minute to lightly thicken the broth.
  4. Build the Flavor: Pour in the chicken broth and add the potatoes and bay leaf. Stir well, bring to a boil, then reduce heat.
  5. Simmer: Return chicken to the pot. Cover and simmer for about 30–35 minutes, or until the chicken and potatoes are tender.
  6. Finish with Fresh Herbs: Remove the bay leaf and turn off the heat. Stir in fresh parsley, thyme, rosemary , and chives right before serving. The herbs should stay vibrant and fragrant.
  7. Serve: Adjust seasoning to taste and enjoy warm with bread or rice.
