Cheese Quesadilla Bento Box

This cheese quesadilla bento is a fun, flavorful lunch that’s perfect for busy days. Soft tortillas are filled with creamy cream cheese and a blend of Mexican cheeses, then cooked until golden and melty. Served with sweet, juicy watermelon, a zesty corn and black bean salsa, and fresh flavors of bell pepper, lemon, and olive oil, this box is both satisfying and refreshing. It’s a great choice for kids and adults who want something quick yet full of taste.

Main:

  • 2 large flour tortillas
  • 4 tablespoons cream cheese
  • 1 cup shredded Mexican blend cheese

Sides:

  • 1 ½ cups watermelon cubes
  • ½ cup canned corn, drained
  • ½ cup canned black beans, rinsed and drained
  • ½ cup bell peppers, diced (any color)
  • Juice of ½ lemon
  • 1 tablespoon olive oil
  • Salt, to taste
  • ¼ cup salsa (or use the corn & black bean mixture as salsa)

Instructions

  1. Make the Quesadillas: Spread 2 tablespoons of cream cheese on half of each tortilla. Top with shredded cheese, fold, and cook in a skillet over medium heat until golden brown on both sides and cheese is melted. Cut into wedges.
  2. Make the Salsa: In a small bowl, combine corn, black beans, diced bell pepper, lemon juice, olive oil, and salt. Toss well.
  3. Assemble the Box: Place quesadilla wedges in the largest compartment. Add watermelon cubes, corn & black bean salsa, and a small portion of salsa or dip in the remaining sections.
