Instructions

  1. Make Caprese Skewers – On each mini skewer, thread 1 mozzarella ball, 2 cherry tomatoes, and 1 basil leaf. Prepare 3 skewers per lunchbox (6total). Drizzle lightly with balsamic glaze or pack separately to add at lunchtime.
  2. Make Chicken Skewers – Roll each slice of chicken and thread 1 slice per skewer. Prepare 3 skewers per lunchbox (6 total).
  3. Assemble Lunchboxes – In each lunchbox, place 3 Caprese skewers, 3 chicken skewers, 8 garlic herb crackers, and ½ cup blueberries.
