I actually made these years ago, but back then I barely had a decentcamera, and honestly, people weren’t ready for the “healthy dessert” glow-up.Fast forward to now—so many of you have asked for this recipe again that I knewit was time for a glow-up video and blog post to match!

The best part? You don’t even need to turn on the oven. These areno-bake, naturally sweetened, and the combination of almond butter, matcha, andcacao gives them this rich, earthy flavor that hits just right. Andlet’s talk texture—rolled in crunchy walnuts, coconut flakes, or extra cacaopowder for that decadent truffle finish.

Ingredient List

Truffle Base:
• 1 ripe avocado
• 9 dates (soaked in hot water for 15 min)
• ½ cup almond butter
• 2 tbsp coconut oil
• 1 tbsp matcha powder
• ½ cup almond flour
• 1 tbsp vanilla extract
• ½ cup cacao powder

For Rolling:
• Minced walnuts
• Shredded coconut
• Additional cacao powder

Instructions

  1. Prep the Dates:
        Soak the dates in hot water for 15 minutes
  2. Blend the Base:
        In a food processor, blend avocado, soaked dates, and almond butter until     smooth.
  3. Add Mix-Ins:
        Add coconut oil, matcha powder, almond flour, vanilla extract, and cacao     powder. Blend until a thick dough forms.
  4. Chill the Dough:
        Transfer to a bowl, cover, and refrigerate for at least 1 hour, until     firm.
  5. Shape into Balls:
        Scoop and roll into 1-inch balls (you should get about 32 truffles).
  6. Coat:
        Roll in minced walnuts, shredded coconut, or cacao powder—get creative and     make a mix!
  7. Freeze:
        Arrange truffles on a parchment-lined tray and freeze for 1 hour. Then     store in an airtight container or freezer-safe bag. Keep frozen for up to     3 months.
  8. To Serve:
        Let thaw at room temperature for 5 minutes before enjoying.
